This skill set reflects the foundational and practical skills required to maintain food safety in a hospitality environment and prepare espresso coffee using commercial equipment. 

The program includes two nationally recognised units: 

  1. SITXFSA005 – Use hygienic practices for food safety This unit covers essential knowledge and skills to ensure food safety through personal hygiene, safe food handling practices, and the ability to identify and report food hazards. It is a mandatory pre-requisite and will be delivered first to ensure learners understand and apply hygiene standards before undertaking any practical coffee preparation.

  2. SITHFAB025 – Prepare and serve espresso coffee This unit focuses on advising customers, selecting and grinding coffee beans, extracting espresso, and maintaining commercial machines and grinders. Complex repairs remain the responsibility of qualified technicians. 

The program is delivered onsite over four days, with SITXFSA005 scheduled on Day 1. Observations SITXFSA005 are scheduled to continue on the morning of Day 2. The remaining three days are dedicated to espresso coffee training. 


Training is conducted in a simulated café environment and includes demonstrations, guided practice, and practical performance assessments.

  • Concessions and the secondary school age fee cap do not apply to commercial courses (short courses), or Foundation Programs (i.e ESL and General Education).
  • Secondary school aged persons (in 2025, students born on or after 1 July 2007 who are at least 15 years old in 2025) undertaking training that is not part of a VET Delivered to Secondary Schools program, the maximum course (tuition) fee chargeable is $420. Additional resource fees and discretionary fees may apply. 
  • VET Student Loans for eligible courses and fee caps may be subject to changes implemented by the Australian Government.
